Description
The Extended Natural process is a coffee processing method in which the beans are dried inside the whole cherry for an extended period, longer than in a standard natural process. Very ripe, high-quality cherries are selected and placed to dry on patios or African beds, carefully controlling humidity and temperature. For several days or weeks, the pulp continues to interact with the bean, allowing it to absorb more sugars and nuances from the fruit.
The result is a coffee with intense sweetness, pronounced fruity notes such as cherry and tropical fruits, a creamy body, complex aromas reminiscent of chocolate, honey or wine, and a smooth, balanced acidity. This specialty process enhances the flavors and makes each cup richer, more complex, and memorable.
